In Cuba, ajiaco is a thick stew made of whatever vegetables and meats you have on hand. On special holidays, a big pot is placed over a fire in the street, and each neighbor contributes something to the pot, culminating in a rich and delicious stew.

Fernando Ortiz, a Cuban ethnomusicologist and scholar of Afro-Cuban culture, said that the ajiaco was the definitive symbol of Cuban culture, since this dish emerged out of the multitude cultural influences (indigenous, European, and African) that shaped Cuban culture and the Cuban people.
